The climate in Bulgaria is highly favorable for sturgeon farming, and the conditions under which we operate at the high extent resemble those of their natural habitat. The sturgeon is farmed in the crystal-clear waters of the Ogosta Reservoir. The water in the cages does not circulate artificially but follows the natural flow of the reservoir. By simulating an environment very similar to the sturgeon’s natural habitat, we ensure that the fish are raised in a healthy, stress-free manner, which directly impacts the quality of both the meat and the black caviar.

During the selection process for a group of female fish for caviar production, male specimens are separated early and raised for subsequent processing and trading of fresh sturgeon fish meat. After caviar extraction, the meat from the female sturgeon undergoes rapid freezing and is then being sold both domestically and for export.

Once harvested, the black caviar doesn’t undergo any thermal processing. We offer an exceptionally natural product, carefully crafted with care and attention to detail by our highly skilled specialists. Every step of the process is performed manually to eliminate the risk of external interference or oxidation.
